This variety of potato is a true sight of amazement. It has both a  bright royal purple color on the outside and on the inside. It contains  high amounts of anthocyanin, which is a strong antioxidant found in  other purple plants like aubergines. Regardless of the strange  appearance, this potato tastes exactly like other white varieties of  potato, and it does not lose its color during cooking.
